Open Pollinated (Which means it's not a hybrid and you can save the seeds to keep growing for years) Hungarian Wax Pepper (chile guero). Typically, this pepper is picked while it is still yellow and immature. In Mexico, it is used in a variety of dishes including sea food soups (caldo de pescado, caldo de camaron, caldo siete mares). Its length is between 4" and 6" inches (10 to 15 cm). The color of the pepper changes from green to orange to red as it ages.
