Have you ever bought Beautiful, Healthy-Looking Herb Plants from your local grocery store or garden center? and 2 weeks go by, and they die, that's because they keep them in a greenhouse with all the nutrients possible. (Basically, a plant on intensive therapy on steroids) once they are subjected to harsher conditions, they perish. Our herbs are never grown in a green house and are subjected to similar conditions as your plants, so there is a lesser chance of plant shock once you plant in your home.
Epazote is a wonderful aromatic plant from Mexico that is utilized in a wide range of recipes and home remedies. If you want to eat salmon, but can't stand the way it smells, add a handful of leaves on top of it and it will taste just like fish with no smell. You can also add to pork or beef when it has too strong a smell. It can be a substitute for cilantro in some dishes.
Epazote is a plant with hollow stalks and big leaves that has been used in Mexico since pre-Hispanic times. It is distinguished by its distinctive flavor. The Nahuatl word for this herb is "epazote," while its scientific name is Dysphania ambrosioides. Epazote is also known as ipazote, pazote, pazoli, and paico.
Epazote is similar to other herbs used in cooking and it is easy to grow in your backyard. It needs full sun, and water twice a week in hot summers (once a week with cooler weather). The plant can live for one to two years and typically grows to a height of 40 cm to 1 meter (possibly a bit longer with extra care). It Re-seeds itself so if you take good care of it and let the seeds mature, you won't have to buy epazote anymore.
Once you have enough plants, since the epazote plant can become invasive, trim the top-growing stems as they develop so that you always have tender leaves with a milder aroma. You will use the leaves and tender stems from the plant's top in your dishes.
